My biggest hold up to starting my own microgreen farm is im really nervous about finding clients and buyers. I feel if i cant find them then it will keep wasting time and money. Any suggestions?

Still trying to figure out the math's behind starting a microgreens business.
I just priced a bunch of equipment and it looks like each 5-level rack is going to run us somewhere around $700 USD ea. (not including the costs of seeds, packaging, refrigerating, and transportation) Does that jive with everyone else's experiences?
Also, how many servings are you typically harvesting in a single 5-level rack?
Lastly, can you get away with one of these in an indoor living area to 'test' the viability of doing this yourself or should this really be done in a non-built out area like a garage or basement? I'm worried about water staining hardwood floors.
