i want to try hydro gardening for vegetables, fruits, and herbs. I built a ebb and flow unit with two seperate systems. I plan to have one for leafy non-fruiting greens and one for fruiting. Where can I find charts for when and to what ratio to use MaxiGro and MaxiBloom according to what I'm growing?

Yes, this should be fine as long as you keep that water aerated while your waiting to use it. This will keep things regulated nicely.
