This is super awesome! Is there a specific reason you are using glass tanks vs using 275 gallon ibc totes. Totes are super cheap and food grade ones make a fantastic holding tank. It’s a happy medium between tanks and commercial grade holding tanks. Tanks that size can be heated with a hot water heater element. 1500w heating element is $10 at a hardware store. The solar heating idea is pretty awesome though.
A couple of things. You said you use RO water for the plants. RO water is devoid of all substances. Good and bad. It pretty much makes pure water without any needed nutrients or minerals. The waste product that remains from RO has high levels of heavy metals (being Michigan I think it would be wise to avoid). Then you put the fish in the heavy metal water? Not the best idea if you ask me. The water quality in the breeding and fry tanks were terrible. You could barely see a full grown male tilapia in a tank only 12 inch front to back. It sounds like you started this massive production based on incorrect knowledge. I'm not even sure if you are still in business.

The tilapia here is actually really good, They are grown in fish farms in large tubs and fed normal fish food. maybe in some other latin countries are different but where im at in Peru, its great quality. Also visited one in Costa Rica that was well kept. But any other countries im not sure
