The kids are harvesting food from the homestead vegetable garden for dinner. Mattie is making dinner and asked the kids to harvest a few things for her dinner recipe. She has many dinner recipes that are always delicious and nutritious. The dinner recipe she made tonight is a simple one: grilled zucchini with salad. This one is really simple. Split whole zucchinis lengthwise, coat with olive oil, sprinkle with sea salt and garlic and grill over an open flame. Delicious!
That is a wonderful thing about homesteading. You can walk out to the vegetable garden and go shopping for your dinner right in your back yard. Just look around to see what is growing and select the vegetable you want and harvest it. The variety is limited only by what vegetables you plant and grow. In this case the kids grew radishes, lettuce and zucchini which was the basis for the healthy meal Mattie prepared.

    I grew my own vegies .now I don't have the time.I do have a large orange tree currently covered in fruit.i also have 2 lemon trees,1 mandarin,1 grapefruit ,3 guava,3 fejoa.All unsprayed.Its great.

    It's a wonderful feeling to be able to go out in the back yard and pull supper out of the ground. After seeing your video on Sun-chokes I got motivated and ordered some. I got them planted last week and they're already coming up. I told my neighbor about them and now he wants some starts too :)

    Your kids are good at harvesting! Looks like those zucchinis are just about the right size. Can't let them get too big. I like breaded and fried zucchinis with parmesan and/or mozzarella cheese. Not the healthiest way to prepare them, but you only live once. :-)

    Probably my favorite summer food enjoyment, Zucchini. Sliced in approx 1/8 inch portions, breaded with soda cracker and egg then fried up in vegetable oil in a regular skillet/pan. Had no idea Zucchini was available already but seeing your garden is producing it it's now on my radar :)

    Those zucchinis look a really nice size perfect for Mattie's recipe. You can do so many things with zuchini. You can grill the big ones as you say. You can stuff them. You can slice the smaller ones and dip them in egg and breadcrumbs and fry them. The ways you can cook them are only limited by your imagination. I think when the weather is hot you don't want a heavy meal Zuchini and a nice salad an excellent idea. A big thumbs up.

    Dinner sounds dilish! I am glad as a parent you have started your children out eating good food!.I watched a documentary called "Coal House" where they took three families with children took them back in time in the 1940's to experience life and I was surprised at the way the children acted towards veggies, like they never ate them before, cried at the dinner tale and acted as if they were going to get sick eating them!
