Looking good man. My Celeste fig does the same thing. Though, my Brown Turkey makes it through the winter fine.
Just a suggestion since you have so many fruit trees and you live in the same area as me, I planted a Fuyu Persimmon from Nazo Landscaping (Durham,NC) a few years back and it has made it through some cold winters. It is native persimmon roots with a Fuyu spliced on top.
Could convert the greenhouse into a makeshift sauna for the summer
